How to Rehydrate and Cook Dried Morels

Dried morels concentrate their flavour considerably, and many cooks prefer them to fresh for exactly that reason. Rehydrate in warm water for 20–30 minutes until pliable, then lift them out rather than pouring — grit settles at the bottom, and morels' honeycombed caps trap it stubbornly.
Keep the soaking liquid. Strain it through a fine cloth or coffee filter to remove sediment; it is intensely flavoured and makes an outstanding base for sauces, risotto or stock. Discarding it wastes the best part.
Morels are classically paired with cream, butter, shallots and thyme, and are exceptional with chicken, veal, asparagus or folded into risotto. Sauté rehydrated morels in butter over medium heat for at least 5–10 minutes.

Morels Must Be Thoroughly Cooked

Never eat morels raw or lightly cooked. This is not a culinary preference — raw morels contain hydrazine-type compounds and thermolabile toxins that cause gastrointestinal illness, and thorough cooking is what breaks them down. Cases of poisoning from undercooked morels are well documented.
Cook them through: 5–10 minutes of proper heat at minimum. Do not use them in a raw preparation, and do not treat the rehydrating soak as cooking. Alcohol appears to worsen reactions in sensitive individuals, so some people avoid drinking alcohol with a morel-heavy meal.
Even properly cooked, a minority of people react badly to morels. Try a small portion the first time rather than a large one.

True Morels vs False Morels

True morels (Morchella) have a distinctly honeycombed, pitted cap that is completely hollow from cap to stem when sliced lengthways — that hollow interior is the definitive check.
False morels (Gyromitra) have a brain-like, wrinkled or lobed cap rather than a pitted one, and are chambered or cotton-filled inside rather than hollow. Gyromitra contains gyromitrin, which metabolises to monomethylhydrazine and can be fatal. It is responsible for a significant share of fatal mushroom poisonings in Europe.
Our morels are identified true Morchella, hand-sorted and verified before drying. If you forage your own, slice every specimen lengthways and check that it is hollow — and if it is not, discard it.

Storage

Store dried morels in a sealed, airtight container in a cool, dry, dark place, where they keep for 12 months or more with little loss of flavour. Their aroma is strong and migrates, so keep them away from other dried goods unless you want everything to smell of morels.
Any dampness, softness or musty smell means moisture has got in — discard rather than attempting to re-dry, since rehydrated-then-redried mushroom material can harbour mould.
