Shiitake is a culinary mushroom and is safe for most people cooked. Two cautions are worth knowing.First, shiitake dermatitis: a distinctive whip-like rash caused by lentinan, associated almost exclusively with raw or undercooked shiitake. Thorough cooking breaks lentinan down and prevents it. Do not eat shiitake raw.
Second, shiitake is immune-modulating, so people with autoimmune conditions should speak with their doctor before taking it in concentrated or supplemental amounts. It may also interact with immunosuppressant medication. Occasional digestive upset or, rarely, skin sensitivity is reported.
